Preserved Meyer Lemons

I've been wanting to try out canning for some time. When I came across these Meyer Lemons, I thought preserving these in salt would be a fun and easy first project.
 
  
 
It's fairly simple - cut into the lemon, slivering it almost to the base and pack into a jar layering with salt. I also added bay leaves and cinnamon. Pack tight with a bit of olive oil at the top and seal. I'm going to give it several weeks and then try them out.
